the small Demeter winery of Klaus Vorgrimmler. As one of the organic pioneers in South Baden, Klaus Vorgrimmler has been producing organic wines for 30 years. When he started to turn his back on conventional viticulture, it was more than courageous and involved a lot of risk. There was hardly any experience. The motto was learning by doing. This long experience is now his great advantage. Klaus Vorgrimmler is not easily rattled by anything. With him, everything seems to follow a different rhythm. Everything radiates calm and composure. His wines ferment spontaneously, are not fined or filtered, and are only minimally sulphured.Â

nose initially appears timid and reserved. The fruit develops slowly. Wonderfully fragrant and juicy Nashi pear, grilled pineapple, and red apple. It is reminiscent of savory pastries and is alive with a very fine yeasty to smoky nuance. The pastry also evokes associations with tarte tatin. It appears chalky and linear. The nose also thrives on a very subtle herbal spice. Parsley, lemon balm, and thyme scent subtly in the background. Some fresh corn and yellow peas add significantly more intense aromas.

Palate: This interplay continues on the first sip. It is linear and completely without melting or pressure. Nevertheless, it maintains a warm core, but is wrapped in a cool, silky blanket. The fruit comes to the fore behind this cool impression, analogous to the nose. It is surrounded by a subtle bitterness that has a very stimulating effect on me. Its straightforward development is unusual at first, but is convincing. Its acidity becomes increasingly powerful over time, yet is perfectly integrated. Dried herbs as well as coriander and fennel seeds build up in the aftertaste.
